Grape strudel

Ingredients

  • 1 pkg of ready-made strudel dough
  • 600 g white/blue grapes, seedless or seeded
  • 50 g walnuts, grated
  • 40 g granulated sugar
  • 25 g custard powder
  • 2 pcs. eggs, yolks and egg whites separately
  • ½ pkg vanilla sugar
  • a pinch of salt
  • 50 g butter for spreading
  • zest of ½ lemon
  • cinnamon
  • caster sugar

Preparation

Wash, dry, halve and deseed the grapes if necessary. Beat the egg yolks, vanilla sugar, lemon zest and cinnamon until frothy. Beat the egg whites, sugar and salt until firm and fold into the yolk mixture. Mix the custard powder and nuts and stir in. Lay out the strudel pastry and brush with a little butter. Spread the mixture in wide strips, sprinkle with grapes, roll up and fold in the ends. Brush with butter, bake at 200 °C for approx. 10 to 15 minutes until golden brown, leave to cool and sprinkle with icing sugar.
